Fiesta in Your Mouth Cilantro Lime Cauliflower Rice

Now onto today's recipe... Cauliflower Rice is one of my household's go-to side dishes as a way to curb calorie consumption, add flavor and boost nutrition. Cauliflower is a member of the brassica family of vegetables which are major players in the detox world. Detox means longer life, clearer skin, more get the picture. So this dish offers a lot of less belly, more health benefits.

There are a million ways to prepare cauliflower rice, just as many as there are regular rice, and this particular recipe makes weekly appearances at our dinner table. Maybe it is because we live in Mexico most of the year running our spa, or maybe it is just simply because it is delicious! The aromatic quality of the cilantro and zestiness of the lime makes your mouth explode as if there was a reggaeton party taking place inside. Someone call Daddy Yankee!

Cilantro Lime Cauliflower Rice


  • 1 large head of cauliflower

  • 1 tbsp avocado or olive oil

  • 3 garlic cloves, minced

  • ½ large onion, chopped

  • ¼ cup chopped cilantro

  • 3 tbsp avocado or olive oil

  • 1 garlic clove, minced

  • Juice of 1 lime

  • ½ tsp cumin

  • ½ tsp salt


  1. Rice your cauliflower: chop your head of cauliflower into florets, place inside food processor and pulse until cauliflower has a rice texture.

  2. Heat a large skillet to medium heat. Add oil, and saute onion and garlic for 3-4 minutes, or until fragrant. Add cauliflower rice and continue to saute.

  3. Meanwhile, make your sauce: Add cilantro, garlic, lime, cumin, and salt to your food processor or blender. While motor is running, add remaining oil. Blend until smooth.

  4. Pour sauce on top of cauliflower rice, and continue to mix until dressing is completely incorporated. Remove from heat and serve.

It is super easy to make and they have even taken the only hard part out at most grocery stores and have frozen cauliflower pre-chopped up for you. Amazing!
